Banskii Vermouth Bar and Bistro is located in the thriving Barangaroo precinct, the restaurant focuses on Vermouth and Mediterranean dishes.
Food
Make sure you visit Banskii on an empty stomach because there’s a ton of dishes to choose from. As the menu is designed to be shared, dishes are categorized into small, medium and large. For two people it’s recommended guests pick 3 small dishes and a large one with sides.

Small and medium dishes vary from the traditional, such as chicken pate and grilled prawns, to the more unique like creamed macadamia.

For mains, my guest and I shared the sticky beef ribs which was paired with smoked carrot and pickled onions. The huge hunk of beef was tender and fell off the bone. I loved the acidity from pickled onions which helped cut through the sweet and sticky sauce.

As usual I picked fries, which was seasoned with smoked salt, for my side dish. My guest wanted the charred corn which was lathered with botanical butter.

Drinks
As the restaurant’s name implies, Vermouth is the drink of choice. Vermouth is a type of fortified wine that’s flavored with botanicals like herbs, leaves and spices. At Banskii you will find an exhaustive list of Vermouth drinks to pick from as well as your standard drinks like spirits and beers.

For a non alcoholic drink, I highly recommend the Elderflower soda – it’s refreshing and fragrant.

Service
Overall the service was average, nothing special but not poor. The restaurant can get quite busy and at times it can take some time to flag a waitstaff.
Atmosphere
Like most restaurants along the Barangaroo, Banksii has both outdoor and indoor seating. During warmer months, the outdoor seats are perfect for lazy lunches.
